Recipes
1. Salmon with Roasted Vegetables
Ingredients:
- 1 pound salmon fillet
- 1 tablespoon olive oil
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 cup broccoli florets
- 1 cup carrots, sliced
- 1 cup zucchini, sliced
- 1 tablespoon lemon juice
Instructions:
- Preheat oven to 400 degrees F (200 degrees C).
- Line a baking sheet with parchment paper.
- Place salmon fillet on the prepared baking sheet.
- Drizzle salmon with olive oil and season with salt and pepper.
- In a separate bowl, combine broccoli, carrots, and zucchini.
- Toss vegetables with olive oil and season with salt and pepper.
- Spread vegetables around the salmon on the baking sheet.
- Bake for 15-20 minutes, or until salmon is cooked through and vegetables are tender.
- Drizzle with lemon juice and serve.
2. Lentil Soup
Ingredients:
- 1 cup dried lentils, picked over and rinsed
- 1 tablespoon olive oil
- 1 onion, chopped
